These two stainless steels are bonded to one side of a heat conducting aluminum core with a solid T-304 layer on the other side. ALCOR 7 offers a unique combination of properties that will produce cookware usable on any type of range or cooktop: gas, resistance-heated electric, and induction-heated electric. The use of ferritic stainless steel to add magnetic properties allows the utensil to be designed and produced using the same tools as the regular ALCO 5 Ply product without special edge treatment.
The magnetic or induction properties of ALCOR 7 are obtained from the special ferritic stainless steel layer under the thin T-304 stsainless steel outer layer. The special ferritic stainless steel has a tightly controlled analysis with special additions of titanium for optimum properties.
The relatively thin layers of T-304 and ferritic stainless steel allow for more aluminum to be used for maximum, even heating--no hot spots. The heavy aluminum prevents "hot spots" that can be produced by gas, electric, and induction heating. A thick magnetic layer, combined with a thin aluminum layer as used by other 7 Ply products, produces cookware that will develop "hot spots."
